Sweet Treats Saturday: Strawberry Cupcakes with Strawberry Meringue Buttercream

What's a better, refreshing, summer dessert than strawberries and cream?  Well, these cupcakes were a perfect combination of the two flavors.



I followed the recipe exactly from Brown Eyed Baker.  You can find it here.



These recipes turned out beautifully - both in looks and taste.  They are a delicious summer dessert that uses fresh strawberries - though you could make them out of season with thawed, frozen strawberries.  The meringue frosting was so easy to make, following her directions to a T.  Hopefully you'll get the chance to make these delicious cupcakes.

Sweet Treats Saturday: Strawberries and Cream Angel Food Cake Roll

I made this delicious jelly roll style cake for Easter and it was a big hit with my family.  It's not overly sweet and has an overall light and airy quality to it.  Even my mom was raving about it (she is really not into chocolate and sweets, but she's big on baking), saying it reminded of her of a favorite childhood dessert from the Philippines.


This cake would be a perfect spring/summertime dessert.  And you can use the egg yolks to make a couple of batches of ice cream!

Strawberries and Cream Angel Food Cake Roll

Ingredients for the cake:
9 egg whites, room temperature
1 1/2 tsp vanilla extract
3/4 tsp cream of tarter
1 cup & 2 tbsp granulated sugar
3/4 cup cake flour
1 tbsp powdered sugar


Directions for the cake:
1. Line a 15x10" jelly roll pan with waxed paper and lightly coat with cooking spray.  Preheat oven to 350 degrees F.
2. Place the room temperature egg whites in a large mixing bowl.  Add the vanilla and cream of tarter to the egg whites.  Beat on medium speed until soft peaks form.  Gradually beat in sugar, 2 tablespoons at a time, on high until stiff, glossy peaks form and the sugar is dissolved.  Fold in the flour 1/4 cup at a time.
3.  Spread the batter into the prepared pan.

Bake for 15-20 minutes or until the cake springs back when lightly touched.  Cool for 5 minutes.
4.  Meanwhile, dust a clean kitchen towel with the 1 tablespoon of powdered sugar.  When the cake has cooled for a few minutes, turn the cake onto the towel.  Gently peel off the waxed paper.  Roll up the cake in a towel, so it forms the jelly roll shape.  Cool completely on a wire rack.

Ingredients for the filling:
2 cups heavy whipping cream, chilled
6 tbsp powdered sugar
1 tsp vanilla extract
3 cups diced strawberries
Optional: Additional powdered sugar for dusting the cake


Directions for the filling:
1.  In a medium bowl, beat the cream on medium speed until it begins to thicken.  Add the powdered sugar and vanilla and increase the speed to medium-high, beating until soft peaks form.  Gently fold in the strawberries.  Store filling in the refrigerator until ready to use.

Assembling the cake:
1.  Unroll the cooled cake.  Spread the filling to within 1/2 an inch of the edges.  Do not overfill the cake - you will have some leftover filling.  Gently roll up the cake again, removing any excess filling from the sides or ends.  Roll so that the seam side of the cake is at the bottom.  Serve with a dusting a powdered sugar and any additional filling.

Sweet Treats Saturday: Champagne Birthday Cake

A birthday for a co-worker proved the perfect opportunity to try a new cake recipe.  Cooked Like A Champion blog had recently made a strawberry champagne ruffle cake which looked too good to pass up.  Two of my favorite things: champagne and strawberries.

The cake was so moist, and I had a lot of extra strawberry puree so I put it in between the two layers coated by buttercream frosting.



Strawberry Cake

Ingredients:


For the strawberry purée:
24 ounces frozen strawberries, thawed



For the cake:
3/4 cup strawberry purée, room temperature
1/4 cup milk, at room temperature
6 large egg whites, room temperature
1 tablespoon vanilla extract
2 1/4 cup cake flour, sifted
1 3/4 cup sugar
4 teaspoons baking powder
1 teaspoon salt
12 tablespoons unsalted butter (1 1/2 sticks), softened

Directions:
To make the strawberry purée, pour thawed strawberries into a fine mesh strainer set over a large bowl to remove any liquid. Save liquid for a later use or discard. Purée strawberries in a blender or food processor and set aside 3/4 cup for the cake. The remaining 1/2 cup can be used to fill the cake, top ice cream, make daiquiris or almost anything else you can think of.



Strawberry Puree

To make the cake, preheat oven to 350º. Butter and flour two 8-inch pans and line with a parchment round.

In a small bowl, whisk together strawberry purée, milk, egg whites and vanilla. In the bowl of a stand mixer fitted with the paddle attachment, combine flour, sugar, baking powder and salt on low speed. Add butter and continue mixing until the mixture resembles coarse crumbs. Add the purée mixture and beat at medium speed until smooth, scraping down the sides and bottom of bowl as needed. Divide the batter evenly among the pans (a kitchen scale works wonders here) and smooth tops with a rubber spatula.

Bake cakes for about 25 minutes, or until a toothpick inserted in the center comes out clean. Cool cakes in pans for 10 minutes, then turn onto a wire rack to cool completely. 


I made an extra half bath of the champagne buttercream so that I would have enough to frost the whole outside and put in between.  It turned out to be the perfect amount.  I'm listed that updated version below, but you can also use the original recipe.

If you have a sec, go check out the original recipe page as the way she decorated the cake was just gorgeous! If I had any kind of talent for frosting a cake, I would have attempted it but alas, I don't have the skill or the patience.


Champagne Buttercream
1 cup plus 1 tablespoon champagne, prosecco or other sparkling wine
3 sticks (1 1/2 cups) butter, softened
4 cups confectioners sugar

Place 1 cup of champagne in a small saucepan set over medium-high heat. Simmer for about 10 minutes, or until champagne has been reduced to 2 tablespoons. Pour into a small bowl and allow to cool.

In the bowl of a stand mixer fitted with the paddle or whisk attachment, beat butter and sugar together on low speed, gradually increasing to medium-high. Beat until butter is lightened and the frosting is thick and fluffy. Add the reduced champagne and the remaining 1 tablespoon of champagne and continue beating until incorporated.


**UPDATE: I added a little food color to the frosting, just to give it a light pink hue, but you don't have to. It still looks lovely without it.

Sweet Treats Saturday: Strawberry Cupcakes


What better excuse than the upcoming Valentine's Day to make pink cupcakes? Actually, the truth of the matter is that I really just wanted to make strawberry cupcakes and since they happen to be pink...

So I stumbled across a recipe for Sprinkles' bakery's strawberry cupcakes while looking for new recipes to try out. Ok, another truth, I'm dieting and looking at desserts that I can bake but couldn't possibly eat is one of my ways of torturing myself.  Now, onto the cupcakes!

These were really easy to make and once again, was made up of items that I had readily available.  I keep frozen strawberries in my freezer for my morning smoothies so I just dug into that stash.  I followed the recipe for the cupcakes and frosting exactly.

The frosting. I made sure not to overbeat per the recipe.

I almost made a cream cheese frosting instead, but I'm glad I didn't as the strawberry frosting was surprisingly delicious (I do like Sprinkles cupcakes, but I'm not really a fan of their frosting... or frosting philosophy).  Instead of piping on a large dollop of frosting, I topped it off the sprinkles way with a thin layer of frosting.  I think the amount was perfect to compliment the cupcake.  My husband, always one to come up with some weird comparison for my baked goods, described it as a strawberry milkshake made into a perfect cupcake.
