Maybe I should call these 'my attempt at Welsh cakes.' They didn't necessarily look pretty but they were delicious.
Everybody Loves Sandwiches posted this recipe as one of their favorites for 2010. I had never heard of them before but am considering a trip to Wales this summer so I thought I'd give them a go.

I didn't read the ingredients correctly before I went to the grocery store so I picked up fresh blueberries rather than dried. They still tasted wonderful but I could see where there were issues. I had to knead the dough which squished some of them, and they weren't pretty when cut in half. Regardless, they worked.

The dough rolled out nicely but I didn't have a biscuit cutter. I need to invest in one for when I make these again. I ended up using a cookie cutter and then cutting the shape in half.
I then fried them up in a skillet... the scent of the orange zest was wafting through the kitchen. It smelled wonderful.
The final result was very tasty. I could even see making them without any fruit filling as the dough was so delicious.
Yum. I've never heard of Welsh cakes. Instead of a biscuit cutter, I use a drinking glass with the right diameter. Works great!
