Sweet Treats Saturday: Kitchen Sink Blondies

Friday night. Dinner is devoured. Dishes are done... and I'm itching for something sweet.

I decided to surprise the hubby with blondies. Chocolate chip cookies are probably his #1 favorite dessert that could only ever be topped by blondies.  But in order for me to fully enjoy them, we would have to include toffee. Fair is fair, right?  So I started collecting ingredients and decided to basically throw in all of the add-ins I could find. Thus, the kitchen sink blondies were created.  Chocolate chips, heath bar, peanut butter chips, walnuts... enjoy!



Kitchen Sink Blondies

Ingredients:
2 1/4 c all-purpose flour
2 1/2 tsp baking powder
1/2 tsp salt
1 3/4 c firmly packed brown sugar
3/4 c (1 1/2 sticks) butter, softened
3 eggs
1 tsp vanilla extract
1 c semi-sweet chocolate chips
1/2 c heath bar bits
1/2 c peanut butter chips
1 c chopped walnuts

Directions:
1. Preheat oven to 350 degrees F.  Grease a 9x13" cake pan.
2. In a small bowl, combine flour, baking powder, and salt.  Set aside.
3. In a large bowl, beat butter and brown sugar until fluffy.  Beat in eggs and vanilla extract. Then, gradually beat in flour mixture.  Stir in desired add-ins (chocolate chips, heath bar, peanut butter chips, walnuts).
4. Spread batter into greased baking sheet. Bake for 20 to 25 minutes, until the top is golden and a toothpick inserted comes out clean.  Cool on a wire rack.

Sweet Treats Saturday: Brown Butter Toffee and Chocolate Chip Cookies

I promised our recent house guests that they would have fresh cookies waiting for them upon their arrival (they were driving all the way from Texas to California) if they could make it by the evening of their second day of driving.  They had been trapped in Southern California traffic and were debating whether or not to push through to the end.  I'd like to think that my cookies were what made them continue the journey.  They made it in record time, and they had these delicious, fresh baked goodies waiting for them.


Brown Butter and Toffee Chocolate Chip Cookies

Ingredients:
1 3/4 cup all-purpose flour
1/2 tsp baking soda
14tbsp unsalted butter
1/2 cup granulated sugar
3/4 cup dark brown sugar, packed
1 tsp salt
2tsp vanilla extract
1 large egg
1 egg yolk
1 cup chocolate chips
1 cup Heath (or similar) toffee pieces

Directions:
1. Preheat oven to 375 degrees F and line baking sheets.

2.  Whisk the flour and baking soda together and set aside.

3.  In a small skillet  over medium-high feet, melt 10 tbsp of butter and continue cooking until the butter is a dark golden brown and has a nutty aroma.  Swirl constantly so it doesn't burn.  This should take a couple of minutes.

4.  Pour brown butter into a heatproof bowl and stir in the remaining 4 tbsp of butter into the bowl, stirring until it's completely melted (it helps if the 4 tbsp of butter are cut into small pieces).

5.  In a large bowl, mix both sugars, salt, and vanilla with the butter and beat using an electric mixer until well incorporated.  Add the egg and egg yolk and mix until smooth, with no sugar lumps in it.

6.  Let the mixture stand for 3 minutes, then beat on high for 30 seconds.  Repeat this process 2 more times until the mixture is thick and smooth.

7.  Stir in the flour mixture until just combined, then stir in the chocolate chips and toffee bits by hand.

8.  Scoop out cookie dough using a medium sized cookie scoop or a spoon - the dough should be about the size of 2 tbsp.  Space 2 inches apart on the cookie sheets.  Bake 10-12 minutes or until the edges are crispy and the insides are soft.  Let cool slightly before transferring to a wire rack.

Sweet Treats Saturday: Chocolate Chip, Oatmeal, and Pecan Cookies

One of my favorite types of cookies is the oatmeal cookies.

But not with raisins.

Never with raisins!

In fact, one of my closest friends and I met when she was the manager of the cafe at the bookstore that I worked at.  I used to complain about the fact that the oatmeal cookies they received ready to be baked came with raisins.  On days when I worked, she would pick out the raisins from the dough of one cookie so I would get my oatmeal cookie without raisins.  She's still one of my best friends to this day.


Nowadays, I just make sure that when I make oatmeal cookies, raisins are never involved.  So when I got my daily cookie recipe from Martha Stewart's mailing list, I was intrigued. Chocolate chip, oatmeal, and pecan cookies.  Not a raisin in sight!  Even the hubby gave these his stamp of approval.  He's a chocolate chip cookie purist, but he was going back for seconds.  These cookies have just the right amount of each of the title ingredients.  They're chewy and a little flaky, and oh so buttery and delicious.  Try them out!

Chocolate Chip, Oatmeal, and Pecan Cookies
Recipe from Martha Stewart

Ingredients: 
1 cup all-purpose flour
1 1/4 cup rolled oats (not quick-cooking)
1/2 tsp coarse salt
1/2 tsp baking powder
1/4 tsp baking soda
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
1 cup lightly packed light brown sugar
1 tsp vanilla extract
1 large egg
1 cup chopped toasted pecans (I didn't toast mine and they were still delicious)
1 cup semisweet chocolate chips

Directions:
1. Preheat oven to 350 degrees F.  In a medium bowl, whisk together flour, oats, salt, baking powder, and baking soda.

2.  In a large bowl, using an electric mixer, beat butter and brown sugar on high until light and fluffy (about 4 minutes).  Add vanilla and egg, beat to combine.  With mixer on low, gradually add the flour mixture and beat until just combined.  Fold in pecans and chocolate chips.

3.  Drop by tablespoonfuls, 2 inches apart, on a parchment lined, or greased, baking sheet.  Bake cookies until puffed and golden around the edges, 12-15 minutes.  Transfer to a wire rack to cool.

Sweet Treats Saturday: Black Bottom Banana Cupcakes

Another recipe to use up those bananas that you just couldn't get to. At this point, I almost wait for my bananas to ripen just so I can make some of these yummy treats.  It's a way to get fruit in my diet, so at least there's an added bonus.




These cupcakes are soooo good.  They're not your standard cupcakes - there's no dollop of frosting on top.  But they're not necessarily muffins either.  They have a chocolate-y banana base, with a chocolate chip, cream cheese layer on top.  The combination?  Perfect! 

Black Bottom Banana Cupcakes
Makes 18 cupcakes

Cream Cheese Mixture Ingredients:
8oz. cream cheese, softened
1/2 cup sugar
1 small banana, pureed
1 egg
1 tsp vanilla
8 oz. (1 cup) semisweet chocolate chips

Chocolate Mixture Ingredients:
1 1/2 cups all-purpose flour
1/3 cup cocoa
1 cup sugar
1 tsp baking soda
1/2 tsp salt
2 large bananas, pureed
1/3 cup oil
1 tsp vanilla

Preheat oven to 350 degrees F. Line two cupcake pans with 18 liners.

Cream Cheese Mixture Directions:
1. Beat cream cheese and sugar until nice and fluffy.  
2. Add banana, egg and vanilla, and mix together until combined.
3. Stir in chocolate chips and set aside.

Chocolate Mixture Directions:
1. Sift together flour, cocoa, sugar, soda, and salt using a wire whisk.
2. Add bananas, oil and vanilla, and mix together on low until combined.

Baking Directions:
1. Divide the chocolate batter between the 18 liners.  Flatten batter slightly to fill the base of the liners.

2. Then top the chocolate batter with the cream cheese mixture.

3. Bake between 25-30 minutes.  The cream cheese batter will be slightly moist but be careful not to overcook as the cupcake bottoms can burn.


Let cupcakes cool slightly... then enjoy!

Sweet Treats Saturday: Crunchie Chocolate Chip Cookies

When I say Crunchie, I'm not talking the texture, but the British candy bar.  Even if you're not in the UK, these candy bars can generally be found all over.  My local grocery store (Fresh and Easy, owned by Tesco) carries them, but you can also pick them up at any British food store.  If you're still having trouble finding them, check out some online candy retailers or even, Amazon.


So, what are these?  Well, if you haven't had them, they're pretty unique.  I can't compare them to any other mass produced candy bar in the States.  Essentially they're a milk chocolate candy bar with a honeycomb like center.  It's not actually honeycomb but a type of crispy caramelization of sugar.  Pretty amazing if you ask me.  We have family in Canada (where they are also found in abundance), and between them and my local grocery store, I'm never in short supply of these delicious bars.  That being said, I was looking for a way to step them up.  I love toffee in cookies so I started to wonder what a Crunchie bar would be like in one.  Time to try it out...


I used the Thick and Chewy Chocolate Chip Cookie recipe from Annie's Eats.  She declared them the 'perfect' homemade chocolate chip cookie.  I figured, if the candy bar filling didn't make it, it would still be a darn good cookie.  Lucky for me, it was both.

The Crunchie bar almost caramelized when baked and on some cookies you would see the toffee forming. Oooooh they were good.  They reminded me of the toffee cookies that you could once get at Mrs. Fields - actually, the only cookie I would get from them... until they discontinued them! Well, now I don't shop there, and I don't need to - I have this recipe instead!  I took the cookies to dance class where they were snatched up instantly.  Luckily, I saved a couple for later.

Oh, and if you don't want to use Crunchie bars, you can use toffee bits, or even just stick to the chocolate chip recipe as is - the hubby thought they were incredible in their original form too.  He considers himself the chocolate chip cookie connoisseur of the house.

Crunchie Bar Cookies (or) Thick and Chewy Chocolate Chip Cookies
Original Recipe from Annie's Eats. I indicate my modifications with a *

Ingredients:
2 cups plus 2 tbsp all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
12 tbsp unsalted butter, melted and cooled until warm
1 cup brown sugar, packed
1/2 cup granulated sugar
1 large egg plus 1 egg yolk
2 tsp vanilla extract
* 2 Cadbury Crunchie bars, chopped into large chunks, or 1 1/2 cups semi-sweet chocolate chips

Directions:
1. Adjust oven racks to upper and lower-middle positions. Preheat oven to 325 degrees F.  Line two cookie sheets with parchment paper or silpats.

2. Whisk dry ingredients together in a medium bowl; set aside.  With an electric mixer, or by hand, mix butter and sugars until thoroughly combined.  Beat in egg, yolk, and vanilla until combined.  Add dry ingredients and beat at low-speed just until combined.  Stir in *Crunchie bars or chocolate chips.

3.  Roll a scant half-cup of dough into a ball.  Holding dough ball in fingertips of both hands, pull apart into two equal halves.  Rotate 90 degrees and, with jagged surfaces facing up, place formed dough onto cookie sheet, leaving ample room between each ball.  Bake, reversing position of cookie sheets halfway through baking, until cookies are light golden brown and outer edges start to harden, yet centers are still soft and puffy (approx 11-14 minutes). Do not overbake.


4. Cool cookies on sheets until able to lift without breaking.  Transfer to a wire rack to cool.


Now, I normally use a small ice cream scoop to shape my cookies, but I read a couple of recipes that used this technique for this type of dough and that it really makes the difference.  So, I followed their directions exactly and admit that this was one of the best cookies I've had.  Is it because of how they were placed on the cookie sheet? I don't know, but I'll take the extra couple of minutes to do it.

Sweet Treats Saturday: Salted Chocolate Chip Blondies

My husband has been asking for me to remake the brown butter toffee blondies that I made around this time last year.  This recipe was a way for me to still try a new recipe, but also curb his taste-buds.  I love making blondies because they always require the most basic ingredients.  The one item that I don't normally stock in my pantry, but did happen to have on hand, were the butterscotch chips.  You could omit them and replace with more chocolate chips, or even use peanut butter chips (hubby's suggestion).


Salted Chocolate Chip Blondies
Recipe from Mountain Mama Cooks

Ingredients:
1 3/4 cups flour
1/2 tsp baking soda
1/2 tsp salt
14 tbsp butter
1/2 cup granulated sugar
3/4 cup packed light brown sugar
1 tsp vanilla extract
1 large egg
1 large egg yolk
1/2 cup chocolate chips
1/2 cup butterscotch chips
1 tbsp sea salt

Directions:
1. Heat oven to 375 degrees F. Grease a 9 x 13 in baking dish.
2. Whisk flour, baking soda and salt together in a bowl and set aside.
3. Heat the butter in a nonstick skillet over medium-high heat until melted, about 2 minutes.  Continue cooking, swirling the pan constantly until butter is dark goldon brown and has a nutty aroma, approx. 1 to 3 minutes.
4. Remove the skillet from heat and transfer butter to large heatproof bowl.  Add both sugars and vanilla to bowl, and whisk until fully incorporated.  Add egg and egg yolk and whisk until mixture is smooth and no lumps remain.
5. Using a spatula, stir in the flour mixture until just combined.  Stir in chocolate chips and butterscotch chips.
6. Press batter into baking dish.  Sprinkle with sea salt. I used just under the 1 tbsp as it was a considerable amount.  Bake bars for 20 to 25 minutes, taking care not to overcook or they will be dry.  Transfer bars to a cooling rack and cool completely.

Sweet Treats Saturday: Chocolate Chip Coffee Cake

I've been wanting to make more coffee cakes. It's such a nice treat to have on the weekend with your morning cup of coffee, or when you have guests over for brunch.  When I found this recipe, I tucked it away for a nice Fall day to try it out.

Chocolate Chip Coffee Cake
Recipe from Two Peas and Their Pod

Ingredients
2 cups all-purpose flour
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup granulated sugar
1/2 cup butter (1 stick) at room temperature
2 large eggs
1 cup sour cream
1 tsp vanilla extract
1 cup chocolate chips

Cinnamon Sugar Topping/Filling
1/4 cup granulated sugar
3 tbsp brown sugar
1 1/2 tsp cinnamon

Directions

1. Preheat the oven to 350 degrees F. Grease an 8-inch square baking pan and set aside.

2. In a medium bowl, whisk the flour, baking powder, baking soda, and salt.  Set the dry ingredients aside.

3.  Using an electric mixer, cream together the butter and 1 cup sugar until fluffy, about 5 minutes.  Add in the eggs, one at a time, beat until smooth.  Beat in the sour cream and vanilla extract.  Mix until well combined.

4.  Slowly add in the dry ingredients.  Mix until just combined.  In a small bowl, make the cinnamon sugar topping/filling.  Stir together sugar, brown sugar, and cinnamon.  Pour half the batter into the prepared cake pan and sprinkle with half the cinnamon sugar and half the chocolate chips.  Spoon the remaining batter over the filling, spreading gently.  Sprinkle with the remaining cinnamon-sugar and chocolate chips.

Ready to go into the oven

5.  Bake until golden and a toothpick inserted in the center comes out clean, about 40 minutes.  Cool to room temperature and serve.

Sweet Treats Saturday: Peanut Butter Chocolate Chip Blondies

As much as I love apples and fruit based desserts, the hubby was begging for blondies.  I couldn't do the same ol' thing, so it's time for another twist on a classic recipe.


Peanut Butter Chocolate Chip Blondies

Ingredients
1/2 cup (1 stick) unsalted butter
2 cups light brown sugar
1/2 cup creamy peanut butter
2 large eggs
1 tsp vanilla extract
2 1/2 cups all-purpose flour
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
3/4 cup chocolate chips

Directions

1. Preheat the oven to 350 degrees F.  Grease a 9x13 inch pan and set aside.

2. In a saucepan over medium heat, melt the butter and brown sugar, stirring constantly until smooth.  Remove from the heat and stir in the peanut butter, until creamy and combined.  Set aside mixture to cool.

3.  In a large bowl, whisk together flour, baking powder, baking soda and salt.

4.  Add the eggs, one at a time to the peanut butter mixture, mixing well after each addition.  Add the vanilla extract and stir to combine.  Pour the mixture into the prepared dry ingredients, and stir until the batter is smooth.  Fold in 1/2 cup of the chocolate chips, reserving the rest for sprinkling on top.
*My peanut butter mixture was still a little warm, so some of the chocolate chips melted into the batter.  I think it actually had a cool effect (swirling the batter), and still tasted delicious, so I didn't mind.  If you do want to keep your chips whole, make sure the mixture has cooled completely before mixing in.

5. Transfer the batter to the prepared pan, spreading the batter evenly to the edges of the pan.  Sprinkle with the remaining 1/4 cup chocolate chips and lightly press them into the batter.


6.  Bake for 25-30 minutes or until the top is golden and the edges are slightly browned.  Remove blondies from oven and place them on a wire rack to cool.  Once cooled, cut into squares and serve.

Sweet Treats Saturday: Blondies with Chocolate Chips and Walnuts

While we're on this chocolate chip kick, how about a new blondie recipe?  This one is basic and so easy to make.  I went with the walnuts, but if you're not a fan of nuts in your baking, omitting them would be fine.  I think the flavor of toasted walnuts is a great combination with the buttery blondie flavor and chocolate chips, but to each their own.



This is another Martha Stewart recipe - she really does have some great ones out there, so why not?  I didn't make any variations to the recipe. Here it is!

Blondies with Chocolate Chips and Walnuts

Ingredients:
8 tablespoons (1 stick) unsalted butter, melted, plus more for pan
1/2 cup packed light-brown sugar
1/3 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
1 cup all-purpose flour
1 teaspoon salt
1 cup semisweet chocolate chips
1 cup chopped walnuts

Directions

  1. Preheat oven to 350 degrees. Brush an 8-inch square baking pan with butter; line pan with a piece of parchment paper, leaving a 2-inch overhang on two sides. Butter paper.
  2. In a large bowl, whisk butter and sugars until smooth. Whisk in egg and vanilla. Add flour and salt; mix just until moistened (do not overmix). Fold in 1/2 cup each chocolate chips and walnuts. Transfer batter to prepared pan; smooth top. Sprinkle with remaining chocolate chips and walnuts.
  1. Bake until top is golden brown and a toothpick inserted into the center comes out clean, 40 to 45 minutes. Set pan on a wire rack, and let cool completely. Using parchment overhang, lift cake from pan and transfer to a cutting board; cut into 16 squares.

Sweet Treats Saturday: Chocolate Tart with Cookie Crust

While this recipe may seem time consuming, if you make your chocolate chip cookies ahead of time, or put some aside from an earlier batch, it shouldn't take long at all.  I used leftover cookie's from last weeks' recipe, so I was able to bake everything (crust, then tart itself) in under an hour.  It was well worth it - this recipe was delicious! Perfect for any chocolate or chocolate chip cookie lover.

Ok, my edges aren't the prettiest but the taste more than makes up for it.

Chocolate Chip Cookie Crust
From Martha Stewart

Ingredients:

2 1/4 cups all-purpose flour
1 tsp baking soda
1 1/4 tsp salt
1 cup unsalted butter, room temp
3/4 cup sugar
2 large eggs
2 tsps vanilla
12 oz. chocolate chips


1. Preheat the oven to 350 degrees.

2. Whisk together flour, baking soda, and salt.
3. Beat butter and sugar with an electric mixer until light and fluffy (about 3 minutes).  Reduce speed to low and add the eggs, one at a time, and the vanilla.  Add the flour mixture in 3 additions.  Add vanilla.  Mix in chocolate chips.
4. Scoop two tablespoon size dough onto a cookie sheet and cook until crispy (about 14-16 minutes).  Check the cookies - you don't want them burnt but they should be crispy.

If you made these cookies ahead (see last weeks recipe), you can store in a freezer bag and defrost before use.  Otherwise, you can make this from scratch and go right into the next steps.

5. For the crust, you will need 16-3inch chocolate chip cookies.  Finely grind them in a blender or food processor.  You should have about two cups of crumbs.

6. Melt two tbsps of unsalted butter and mix with the ground cookies.
7. Press into the bottom and up the sides of a greased tart pan (I used a spring form pan as I don't own a tart pan) - you just need a pan with a removeable bottom.
8. Bake at 350 degrees until firm and slightly darkened; about 10 to 12 minutes.  Let cool completely.

Tart Filling

Ingredients:
1 cup heavy cream
8 oz semisweet chocolate, chopped
1 large egg
1/4 cup whole milk
1 tbsp butter

1. Reduce oven temp to 300 degrees.
2. Heat cream in a saucepan until just about to boil.  Pour over chocolate in a heat proof bowl.  Let stand for 1 minute, then stir until smooth.
3. Whisk in egg, milk and butter. 
4. Pour into cooled crust.

Chocolate is poured and ready for the oven
5. Bake tart until edges of filling are set but the center still jiggles.  It may be between 20-30 minutes depending on your oven.

Baked and jiggly. Let cool then remove from pan.
6. Cool on a wire rack.  Serve warm or at room temperature (do not refrigerate).  Can top with creme fraiche or other whipped topping.

Sweet Treats Saturday: Chocolate Chip Cookie Dough Cupcakes

I recently went through a chocolate chip phase (started thanks to Martha Stewart, but more on that in a bit), and ended up making quite a baked goodies featuring the faithful chocolate chip.  It all started when I was given a copy of the July issue of Martha Stewart Living.  She had a whole feature on chocolate chip cookies and the many concoctions you could whip up with a chocolate chip cookie base.

So this week and next, I am posting two recipes that can go hand in hand, all because of one main ingredient... the chocolate chip cookie.  I hope you enjoy this as much as I did!



Chocolate Chip Cookie Cupcakes
Recipe from Martha Stewart

Ingredients:
1 1/2 cups all-purpose flour
1 1/2 cups cake flour
1 tbsp baking powder
1/2 tsp Salt
1 cup unsalted butter, room temp
1 3/4 cups sugar
4 large eggs
2 tsps vanilla
1 1/4 cups milk
2 1/4 cups chocolate chip cookie base (see below)

1. Preheat oven to 350 degrees. Line muffin tins with baking cups.
2. Whisk together flours, baking powder, and salt.
3. Beat butter and sugar with an electric mixer until light and fluffy (about 3 minutes).  Reduce speed to low and add the eggs, one at a time, and the vanilla.  Add the flour mixture in 3 additions, alternating with milk but beginning and ending with flour.
4. Press 1 tbsp of the cookie base into the bottom of each baking cup.  I used a small cookie dough scoop or you can use the tip of a spoon.  Then top the dough with two tbsp of batter.  It should just cover the dough.

5. Bake about 18 to 20 minutes when a toothpick in the center comes out clean.  Let cool.

Chocolate Chip Cookie Base
From Martha Stewart

Ingredients:
2 1/4 cups all-purpose flour
1 tsp baking soda
1 1/4 tsp salt
1 cup unsalted butter, room temp
3/4 cup sugar
2 large eggs
2 tsps vanilla
12 oz. chocolate chips

1. Whisk together flour, baking soda, and salt.
2. Beat butter and sugar with an electric mixer until light and fluffy (about 3 minutes).  Reduce speed to low and add the eggs, one at a time, and the vanilla.  Add the flour mixture in 3 additions.  Add vanilla.  Mix in chocolate chips.

Options:
If baking into cookies, preheat the oven at 350 degrees.  For this recipe, you use the raw dough (which cooks with the cupcake batter in the oven).  You can make miniature cookies to top the cupcakes.  Or you can do what I did, which was use the dough to make the cupcakes, then use the extra for the mini cookies to be the cupcake toppers and to make extra crispy cookies which will be used in next week's recipe.

Vanilla Frosting
Own recipe. The recipe from the magazine called for a lot of butter (4 and a half sticks!) and I prefer my own vanilla recipe.  This is the same recipe from the Ice Cream Cone Cupcakes:

Ingredients:
1 cup butter
4 cups powdered sugar
3 tbsp milk
1 tsp vanilla

Beat butter in bowl of electric mixer until light and fluffy, 2-3 minutes.  Add 1/2 cup sugar at a time until completely mixed.  Add the milk 1 tsp at a time followed by the vanilla to achieve desired thickness.

Sweet Treats Saturday: Toffee Almond Chocolate Chip Cookies

I can't believe that I haven't written about these cookies before.  As a matter of fact, if I have, the first person to find it gets a prize!  No seriously, these cookies are delicious.  I stumbled across the recipe on the Two Peas and Their Pod blog.  As I may have mentioned before (several hundred times), I love toffee.  It's up there with sea salt and caramel for me.  So making these cookies was an obvious choice.  However, the first time I made them, I had no idea what 'almond paste' was.  I scoured the bakery aisle at my grocery store looking for it, just assuming that was the section it would be stored in.  Just as I had given up hope, I saw the tubular box of almond paste tucked away by the chocolate chips.  This time when I made the cookies, I was prepared.  I sent the hubby out to buy the marzipan for my sheep cupcakes, knowing the almond paste would be right beside it on the shelf.  What a pity if it fell into the cart and I had to make these again...

So here I was with a tube of almond paste ready to make these toffee cookies again.  They whip up just like any other batch of chocolate chip cookies, but with this delicious ingredient.  Another bonus to these cookies is the toffee to chocolate ratio.  I'm not a big fan of super chocolate-y cookies, so if you prefer more, I would swap out some of the toffee for more chocolate chips.  The current ratio is just right for the consistency of the batter, so you don't want to add too many fillings or you'll be left with little batter to make up the actual cookie.

Chocolate Chip Almond Toffee Cookies
From Two Peas and Their Pod


2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter, at room temperature
3/4 cup granulated sugar
3/4 cup brown sugar
3 ounces almond paste
2  large eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups chopped toffee (homemade, Skor, or Heath bar are all fine)
1 cup semi-sweet chocolate chips


1.  Preheat oven to 350 degrees F.  Line a large baking sheet with parchment paper or a silicone baking mat. Set aside.


2. In a medium bowl, whisk together the dry ingredients. Set aside.


3. In the bowl of a stand mixer, beat the butter and sugars together with the beater blade for about two minutes.  Add the almond paste in pieces and mix until well combined. Add in eggs one at a time. Add the vanilla extract and mix well.

Now that is batter that makes you want to lick the spoon

4.  Add dry ingredients to wet ingredients slowly mix until dry ingredients disappear.  Stir in toffee and chocolate chips. Scoop dough onto prepared  baking sheet with a medium cookie scoop.  Bake for 12-14 minutes or until cookies are golden brown around the outside.  Let cool on baking sheet for 5 minutes and then transfer to a cooling rack.
